Donuts. Simple pleasure. Just saying so. This stand in Pike Street Market never fails to satisfy. Who wouldn't enjoy sugar on fat on starch :)

Breitenbush Hot Springs Retreat is quite a place to bring in the new year. A spa more than a few miles off the grid in a nearly self-sufficient community with it's own power plant, gardens, etc. Pure bountiful organic meals. No caffeine. Lots of time to read. No wifi. Best massage of a lifetime....no exaggeration. Lots of classes available for practices/exercise of the mind and body that I can't pronounce nor know if I they are compatible with my routine or convictions. Curious though!



What else...enjoying hot springs on a cold night with clear sky feels right. Though seeing a flashlight bobbing toward you while you're sitting in the hotsprings on a cold night with clear sky makes you feel a bit vulnerable.

So, this isn't a good picture, but is a recommendation if you find yourself near Portland to find The Grilled Cheese Grill. Ridiculously satisfying grilled sandwiches. Would appeal to anyone who is a foodie and has enough character to dine on a bus.

Overall an excellent time to catch up with my long lost friend, Amy. Excellent time.

Yuuuuuummmmmmmmmmmmmmm......

A craving for Key Lime Pie sent me googling on "Best Key Lime Pie Recipe". I landed on one from Emeril Lagasse (you can see the full recipe here).

I opted to use the small pre-made graham cracker crusts and made only half the recipe. This made it quick...but oh so delicious. To create this culinary masterpiece ;) put the mixture of 1 14-ounce can condensed milk, 1/2 cup lime juice and one egg in the crusts and bake for 15 minutes at 375. Chill. Somehow put mixture of 1/2 cup sour cream with 1 tablespoon powdered sugar on chilled mini-pies and grate on some lime zest and voila!!

20 Seattle-ites and Portland-ers descended on (or "ascended" depending on how you see it) Mt. Baker for the weekend...snowboarding/skiing, cabin-bonding, snow-shoeing, laughter and fellowship is a consistent winner! Thanks to Gerald, Angela and family for making our Sunday wonderful!

As a side note, I was very happy with this breakfast bar recipe by Nigella Lawson who is often featured on NPR. My days of making trail mix are over.

1 14-fl-oz can condensed milk (warmed)
2 1/2 cups rolled oats (not instant)
1 cup shredded coconut
1 cup dried cranberries
1 cup mixed pumpkin, sunflower, sesame seeds
1 cup natural unsalted peanuts

After pressing into oiled 9" x 13" pan, bake at 250 degrees for an hour. Cool. Consume.
